We’ve been on this vegetarian kick for a while now. When I say “we” I’m definitely referring to more so my husband and not necessarily me. 🥴 I’ve been doing good with my pescatarian diet though!! So give me props, THANK YOU! Although, whenever I don’t have seafood to eat – thats when I hop on the vegetarian band wagon.
One of the things I knew Bear would eat was something deep fried. I mean… won’t we all. 🤷🏾♀️
Attempting to eat more veggies becomes a struggle after a while – especially when you don’t normally eat a vegetarian diet. Of course when the person who decided to be vegetarian, doesn’t even like vegetables – it’s even more difficult. Ugh 🤦🏾♀️ So here I am… constantly trying to cook basic vegetables in new ways just to introduce some type of variety. It seems redundant to me, but all the rage to him lol.
Let’s be honest – fried cauliflower isn’t new nor is it the healthiest. Still and all it’s better than fried chicken any day. Which makes me happy to offer some type of meat substitute no matter how basic or “unhealthy” it may seem.
Plus, you can’t go wrong with anything deep fried – unless you just suck at frying food 🤷🏾♀️
Chicken Fried Cauliflower
– 1 large head of Cauliflower, cut into 1″ thick slices (about 3 slices + florets)
– 2 C Flour
– 1 C Cornstartch
– 5 Tbsp Feisty Spices ‘BASIC’ Blend
– 4 Large Eggs + 4 Tbsp Water, beaten (eggwash)
salt & pepper, to taste
vegetable oil. for frying
Preheat oil to 365ºF
Season cauliflower with 2 tablespoons Feisty Spices ‘BASIC’ blend, salt and pepper. Set Aside.
In a deep bowl/dish combine flour, cornstarch, remaining Feisty Spices ‘BASIC’ blend, salt, and pepper. Set Aside.
Set aside another deep dish for egg wash.
Coat cauliflower in flour, shake off the excess. Then coat in egg wash, let excess drip. Then coat into flour again.
Fry in preheated oil immediately.
Fry cauliflower until golden brown, about 1-2 mins per side.
Drain on a rack or paper towels.
Serve hot, as desired.
Tips: buffalo sauce, bbq sauce, etc
