Tequila Lime Shrimp Fajita Bowl

I want to cook dinner, but don’t want to spend money. As I forage the pantry, I find rice and black beans. “Great! What else so we have?,” I think to myself. I shuffle from pantry to freezer, as soon as I open the freezer drawer I see we have corn and shrimp. “YES! We got dinner baby!” As I dance upwards to the fridge, I notice we have onions and tomatoes. The only ingredients missing cilantro, jalapeño, and lettuce. Not necessarily things I need for the cooking process, so I’m in the clear. “WHOOP WHOOP, no store run for me! Ha!”

I text Bear to stop at the store on his way home from work, because why not? He’ll pass by it anyway. Better than me having to leave the house. Hell if he wants to eat, he’ll stop.

Proceeding to prepare dinner, I cook brown rice for me and the kid, and white rice for Bear.

While the rice is doing its thing on the stove, I begin to chop the veggies and prepare my shrimp. Dinner preparation flows flawlessly, I pour myself a glass of cheap champagne while I await Bear and his arrival of the final pieces to this yummy dinner puzzle.

Tequila Lime Shrimp Fajita Bowl

– 4 C Brown Rice or White Rice, already prepared
Tequila Lime Shrimp:
– 2 lb Shrimp, peeled and deveined
– 1 Tbsp Olive Oil
– 1/4 C Favorite Taco Seasoning
– 2 Tbsp Garlic, finely chopped
– 1/4 C Tequila
– 1/2 C Rotel
– 1 Lime, juice + zest
Caramelized Corn for Topping:
– 2 C Whole Kernel Corn
-2 Tbsp Butter
– 2 Tbsp Brown Sugar (optional)
– 1/2 tsp Crushed Red Pepper Flakes (optional)
– 1 can Black Beans, drained
– 1/2 C Tomatoes, diced
– 1/2 C Onions, diced
– 1 Large Jalapeño, diced
– 1/2 C Cilantro, chopped
– 2-4 C Lettuce, thinly sliced
– 1/2 C Mango, diced (optional)
garnish with fresh lime and salsa
In a large skillet, melt butter over medium heat. Add corn, sauté for 1-2 mins. Add sugar and red pepper flakes, sauté until sugar is dissolved and corn in caramelized to a light golden brown. Set Aside.
*this is optional, you can skip this step and just use fresh corn*
In the same skillet, heat olive oil and sauté garlic until fragrant. Add shrimp and sauté for about 1 min. Add taco seasoning, and sauté until slightly pasty. Then add tequila, and stir until sauce is smooth. Next stir in rotel, and let simmer for about 1-2mins.
Add lime zest and lime juice. Remove from heat.
