I don’t know about y’all but I’m NOT big on breakfast eating early in the morning just isn’t a desire of mine. I’m barely awake, and now you want me to cook food – let alone actually chew it. Don’t judge me, I’m a lazy eater. Typically, if it requires a fork and a knife to eat, I’m no longer interested.
I love simple foods, soups and stews, salad, hell I’ll even take a sandwich or wrap. So when it comes to breakfast, the standard eggs, bacon, pancakes – uummm no thank you. However, throw a bowl of grits or oatmeal in front of me (during the right time) I will devour it in seconds!
In my attempts to cook breakfast in the mornings, whether its for me or my kid, I’m looking for more diverse ways to present the same foods. lol (because I’m a lazy breakfast cook/eater) Yes, I’m a chef, but lets be real – I cook all day for strangers, so I hate to say it, but my family gets the short end of the stick when it comes to preparing meals for them. Luckily, my husband does majority of the cooking. I’m so grateful for him y’all.
Due to my lack of interest in voluntarily cooking breakfast in the mornings, I’ve come up with a super yum oatmeal recipe that doesn’t require much effort at all. #Winning
Brown Sugar Oatmeal w/ Caramelized Plums
– 2 cups milk
pinch of salt
– 1 cup old fashioned or rolled oats
– 1/4 cup brown sugar
– 1 tbsp vanilla
– 6 tbsp butter, sliced and separated (2 tbsp, 4 tbsp)
– 2 plums, halved & pitted
– 4 tbsp butter, sliced
– 1/4 cup amaretto or bourbon (optional)
– 2 tsp orange zest
– 2 tsp cinnamon
Preheat oven to 375ºF
Set plums in a coated baking pan. Combine amaretto, cinnamon, and orange zest, pour over plums. Top each plum with a tablespoon of butter. Bake for 10-12 mins.
Meanwhile, in a medium sauce pan bring milk and salt to a medium/high simmer, about 1 mins, then stir in oats. Cook oats for about 5-6 mins. Stir occasionally.
Once oats are tender, stir in brown sugar and butter, let simmer on low for an additional 2-3 mins.
Remove plums from oven, they should be tender enough to cut with a spoon.
Portion out oatmeal to 1/2 or 1 cup servings and top with plums and juices from the pan.
