Spicy Caesar Salad Wrap

I’m always looking for filling meatless meals, I’m still trying to transition to a vegetarian (maybe vegan) lifestyle, so incorporating more meatless meals into my eating habits has become a huge goal of mine. Its great because now even Bear is on board with the meatless meals as well. The kid is pretty easy, he already loves fruits and veggies, sooo… no meat = no big deal.

I’m becoming more aware of the foods that I eat because my body doesn’t digest certain food the way it once did. After certain meals, containing chicken or beef, I would begin to feel tired and extremely weighed down. Studies show that eating less meat help you to produce more energy quicker because your boy doesn’t have to work as hard to break down meat enzymes during digestion. Its not the best feeing in the world, especially since I need to stay energized to run my business.

It got so bad that I started going the entire day without eating at all just to avoid that feeling. That only became more detrimental to my health, because I started to get light headed and would some times pass out from lack of nutrition. However, I literally despise eating during the day. So I had to find alternative ways to get the nourishment I needed, while still being able to stay on the go. I started with smoothies for lunch, then it turned into soup + salad combos. That’s when I realized, I needed to just change my eating habits.

Now that I’ve gotten this whole “eating lunch” thing down…

Here is a quick and easy meatless wrap, that has become my favorite for on the go munching.

Spicy Caesar Wrap

– 2 large tortilla
– 2 Tbsp sriracha carrot hummus (or any other flavor)
– 1/2 cup rainbow kale, chopped
– 1/2 cup romaine, chopped
– 3-4 cherry tomatoes, quartered
– 2 Tbsp parmesan cheese
– 1/4 cup croutons
– 2-4 boiled eggs, quartered
– 2 Tbsp toasted pepitas, sunflower seeds, or almonds
– 1/4-1/2 cup caesar dressing
– salt & pepper to taste


In a large bowl, combine kale, romaine, tomatoes, cheese, croutons, eggs, seeds, and dressing. Toss until salad is completely coated, and mixed well.
Spread hummus on tortilla., then fill with about 1 cup of salad mix. Keep salad mix to one side of the tortilla. Pack the salad mixture together tight, while you begin to roll the tortilla over the mix. Roll all the way to the end, and secure with a toothpick, if needed.

Drizzle with more dressing, if desired
