Spinach & Artichoke Dip

Here’s an amazing recipe that’s fun to make, as well as quick, easy, and inexpensive. If only life was the same way.

Oh, but it isn’t. Everyday is a new lesson just waiting to be completed. I made that sound nice didn’t I? Yeah, I did. In my opinion that’s how you have to look at the challenges in life, as a new lesson. We never know what will happen day after day, but we must be willing to proceed at all costs.

Challenges are thrown at me on a daily. Whether it’s helping my son overcome a new trial, or it’s a change within the business. Either way, it’s always something. For some, I’m sure it’s relationship challenges (we have some of those too by the way). For others, it’s finances or a job. Let’s not forget emotional and mental challenges as well. No matter the subject, we all deal with some “unplanned” thing – and it isn’t always easy.

Martin Luther King Jr. once said, “The ultimate measure of a man is not where he stands in moments of comfort and convenience, but where he stands at times of challenge and controversy.” Stand tall, and confident during the adversities of life and you’ll be able to conquer each lesson with dignity and control.

Therefore, we should face the challenges we are given and never make anything more difficult than it needs to be. As in, don’t stress over the difficulties; it will do nothing but make your lesson appear harder than it actually is.

I am sure we’ve all been there before – it isn’t always a pretty start. This spinach dip recipe is though! Pretty start, easy process, and quick finish. Life may not be this simple, however here’s something to divert your thoughts and ease your mind – even if it’s only for 20 mins πŸ€·πŸΎβ€β™€οΈ.

Baked Spinach Artichoke Dip

  • Servings: 4-6

Ingredients:

– 3 to 4 C Spinach (about one bag)

– 1 can Artichokes Hearts, quartered

– 3 C Mozzarella & Parmesan Cheese, shredded

– 1 PKG. Cream Cheese

– 1/2 C Sour Cream

– 1 to 2 tsp. Cayenne Pepper (optional)

– Salt & Pepper, to taste

Directions:

Preheat grill to 350ΒΊF

In a stand mixer, beat cream cheese and sour cream until smooth.

Next, add the artichokes, mix for about 1 minute. After that, add 2 cups of shredded cheese and mix for an additional 1 minute.

Season with salt and pepper, then add the spinach and mix until well incorporated. Add Cayenne pepper, if desired.

Now spray an oven safe dish with non-stick spray. Transfer the spinach mixture to the dish, and bake for about 10-12 minutes.

When the dip is heated through and slightly bubbly, top with remaining cup of shredded cheese. Then bake for an additional 5 minutes or until cheese is melted, bubbly, and slightly browned.

Serve hot with chips, crackers, or crostini’s.
