I’m all for quick and low maintenance meals. Especially when is comes to running a business, maintaining this blog, and ensuring that my son and husband get as much as my presence as possible. I have to admit keeping the balance between being a mom, wife, entrepreneur, and wanting my family to eat quality healthy meals on a regular basis is a struggle. Don’t even get me started on my social life.

This is why I’m excited to share this recipe with you guys. Not only is it easy to execute, but its also low in fat. I mean come on!! It doesn’t get any better than that. You mean to tell me I can whip up a guilt free dinner and still have time to focus on other things. #WINNING
BBQ Catfish
Ingredients:
– 1 16oz Catfish Filet
– 1/2 C The Jank BBQ Sauce
– 2 Tbsp. The Jank All Purpose Dry Rub
Directions:
Preheat Grill to 350ºF
Rinse catfish filet, then pat dry. Next, season with All Purpose Dry Rub. Brush about 1/4 cup of BBQ sauce over fish. Set Aside.
Coat a fish grill basket with non stick spray or brush with olive oil.
Transfer fish to grill basket, and cook on grill for about 4-5 mins per side.
Serve Hot.
Side Suggestion:
Sweet Butter Corn on the Cob
Ingredients:
– 4 1/2 Ears of Corn
– 4 Tbsp. Butter
– 4 tsp. Sugar
– 1 tsp. Parsley
– Salt & Pepper, to taste
Directions:
Preheat Grill to 375ºF
Season each corn cob with 1 tablespoon of butter and 1 teaspoon of sugar. Sprinkle with Parsley, Salt, and Pepper.
Wrap each corn cob in a foil, and cook on grill until tender. This should take about 10-15 mins.
