Easter Dinner Ideas

Easter is literally around the corner! If you’re anything like me, you’ve probably already had a busy couple of weeks – but still obsessed with pulling off an amazing Easter with your friends & family.

So what do I do when I only have 3 days to pull off an awesome Easter shindig?

Dinner!

A simple, yet elegant dinner is the way to go for such a heartwarming occasion. You may be thinking “there is nothing simple about an elegant dinner” right now. Oh but there is young grasshopper.

Skip the turkey, rack of lame, and roast. These are some time consuming proteins that we don’t have time to stress over. Not saying there’s anything wrong with these things, but there’s always the dinner day mishaps that we aren’t prepared for Such as a dry turkey, or undercooked lamb, flavorless roast…shall I go on?

Opt for something that requires a little to no effort, but can still be mind-blowing. Glazed Ham! Yea I said it! A ham! This Ham took all of 45mins to prepare. The key is to get a pre-cut spiral ham that only needs to be heated through. However, with my Espresso Fig Glaze, you are sure to blow everyone’s mind.

Espresso Fig Glazed Ham

  • Servings: 8-10

Ingredients:

– 1 – 10lb Spiral Cut Ham w/ Glaze Packet

– 2 C Fig Jam, heated

– 1/4 C Instant Espresso Powder

– 1/4 C Hot Water

– 2 tsp Black Pepper

Directions:

Preheat oven to 400ºF

Place Ham in a roasting pan and cover with foil or lid. Bake for 30-40 mins or until heated through.

While ham is heating, prepare the glaze.

Microwave Fig jam in a bowl for a bout 30 seconds, or until melted. Combine espresso and hot water, then whisk into fig jam. Add black pepper. Set Aside.

Once the ham is heated through, uncover, and coat with glaze. Bake for 5-10 mins or until glaze creates a golden crust over the ham.

Remove from oven and serve on a platter.

Try these yummy recipes that are perfect for any Easter Theme. The good thing about this entire dinner is that you can place everything in the oven at once, and focus on preparing the house for your guests.

Garlic Parmesan Scalloped Potatoes

  • Servings: 10-12

Ingredients:

– 5 Russet Baking Potatoes, washed

– 2 Tbsp Butter

– 2 Tbsp. Flour

– 2 C Heavy Cream or Coconut Milk

– 4 C Shredded Cheddar Cheese (I used this! It melted so effortlessly)

– 1/2 C Parmesan Cheese, Grated

– 2 Tbsp. Garlic, minced

– 2 Tbsp. Garlic Powder

– 2 Tbsp. Parsley

– Salt & Pepper, to taste

Directions:

Preheat oven to 400ºF

Thinly slice potatoes with a mandoline or knife. No need to worry about peeling them, we are saving time with this recipe. Set Aside.

In a medium sauce pan, melt butter then stir in flour until a roux forms. Season with Salt, pepper, and garlic powder. Next, slowly whisk in the cream, add minced garlic, and allow to thicken. Remove from heat and stir in 2 cups of shredded cheese.

In a greased pan, add about 1 cup of the creamy cheese mixture in the bottom of the pan. Layer the potatoes in the pan with the remaining cheddar cheese, parmesan cheese, and creamy cheese mixture. Bake covered for about 35-40 mins.

Once the potatoes are tender, top with more cheese (if desired), and bake for an additional 5 mins until cheese is bubbly and melted.

Serve Hot.

Spiced Maple Roasted Carrots

Ingredients:

– About 20 Medium Carrots, peeled

– 1/4 C Pure Maple Syrup

– 1-2 tsp Crushed Red Pepper Flakes, optional

– 1 tsp Paprika

– 2 tsp. Garlic, minced

– Salt & Pepper, to taste

Directions:

Preheat oven to 400ºF

Drizzle prepare an oven safe pan with cooking spray or olive oil. Place carrots in prepared pan. Make sure the carrots are lined evenly in the pan.

In a medium bowl, mix together maple syrup, red pepper flakes, paprika, garlic and salt and pepper.

 Pour spiced maple syrup over carrots. Coat them well. Roast in oven for 25-30 mins, or until tender.
