Man oh man! I have been craving waffles for the absolute longest.

I don’t know why I had such an insane notion to deprive my beautiful soul of such a glorious carb. 🤤 NEVER AGAIN!

I woke up this morning saying to myself..

Before I do ANYTHING, I’m eating some freaking waffles. A HUGE plate of waffles. I didn’t have much in the kitchen to work with, the only fruit I had were grapes and oranges (mandarins to be exact).

Mandarins it is then.

After halfway through preparing the super yummy waffles, I realized I didn’t have maple syrup..

😫 WHYYY LORD?! Why?!

There was absolutely no way I was going to the store… It was freaking 33 degrees outside. NO MA’AM!!

Luckily, I had some smoked honey left over from a recipe that I was experimenting with not to long ago. Clearly I’m still working out the kinks since I haven’t posted it yet. Anyways…

On to these waffles. They were everything that I’d been craving. Mm mm mm

Nice and crispy on the outside, fluffy on the inside, and not too sweet but just enough sugar to make me do my happy dance. *Does foodie twerk* I hope this recipe gets you foodie twerking as well!! LOL

Roasted Mandarin Waffles w/ Smoked Honey

Ingredients: – 2 C Flour

– 4 tsp Baking Powder

– 1/2 tsp Salt

– 1/4 C Sugar

– 2 eggs, seperated

– 2 C Buttermilk

– 1/2 C Butter, melted

– 1 tsp Orange Extract or Vanilla

– 1 Tbsp Orange Zest, optional

– 6 Mandarins, bruleed – for garnish

– Smoked Honey – for garnish

Directions: Preheat a waffle iron to med-high heat.

In a large bowl combine flour, sugar, salt, and baking powder. Set aside.

In another bowl, combine milk, egg yolks, butter, extract, and zest. Set aside.

In a separate bowl, beat egg whites until stuff peaks form. Set Aside.

Add milk mixture to the flour mixture, mix well. Next, slowly fold the egg whites in the waffle batter until well incorporated.

Spray waffle iron with non-stick cooking spray.

Cook waffles for about 3 – 5 mins or until golden brown and slightly crisp.

*an easy way to brulee the Mandarins: cut Mandarins in half, and place cut side down in a hot non-stick skillet with butter. Cook for about a minute or until the oranges start to caramelize.* Squeeze bruleed oranges over the waffles with a little honey or maple syrup.
