I’ve been running again! However, this time it’s different. How? Because I’m no longer drilling myself with the obsession of being skinny. Instead, it’s my quiet time. My time to clear my head, relax, and focus on the “now.” It feels good.
About a week ago, I did a 3 day smoothie cleanse. I needed to to get rid of the toxins in my body and boost my energy levels. It was amazing. I felt great. (I will post my detox smoothie recipes soon!) So to keep up the momentum, I decided to be more mindful of my depreciated eating habits. So after my run.. breakfast! I didn’t want anything too heavy, but I also didn’t want anything cold or super light. LOL
Pancakes it is! Then I was like…DANG, I gotta watch my carb intake, because too many put me to sleep – with a lack of urgency about the rest of my day. So I decided to lighten them up – just a bit.
It only made sense to make them out of oatmeal.. DUH! I made a few extra for my mom to eat – since I’ve been force feeding her with healthy meal options lately. *evil laughs* If I’m eating healthy – EVERYBODY IS EATING HEALTHY!
It’s so hard getting her to eat right, sheesh, she doesn’t even like vegetables. smh I feel like I’m feeding a toddler… with the desire for high blood pressure and diabetes. So when I cook healthy I have to disguise it as something else. You know to get her intrigued in these pancakes, I had to make them look like a hearty stack of goodness. Her eyes basically popped out of her head when she saw that mouth-watering plate of pancakes in the kitchen. LMBO! She dug right in! #missionaccomplished
My mother enjoyed them so much, she packed the off to my aunt – leaving me with… none. And…because I didn’t feel like cooking more, I made myself a smoothie. -__- Great! I ended up having something cold after all.

Oatmeal Pancakes w/ Honey Roasted Plums
– 1 cup Oat Flour
– 1/4 cup Instant Oats
– 1 Tbsp. Brown Sugar
– 1 tsp. Baking Powder
– 1/2 tsp. Baking Soda
– 1/2 tsp. Salt
– 3/4 cup Almond Milk
– 1 tsp. Vanilla
– 2 Tbsp. Coconut Oil
– 1 Egg
– 2 Tbsp. Honey
– 1 Pear, cored
– 1 Plum, cored
Preheat oven to 375°F
In a medium bowl, combine oat flour, oats, sugar, baking powder, baking soda, and salt. Set aside.
In a small bowl, mix together milk, vanilla, oil, and egg. Next, slowly whisk the milk mixture into the flour mixture. Set aside.
Next, line a baking sheet with parchment paper. Toss plums and pears, (or any stone fruit you would like) with honey, and roast in the oven for 15-20 mins.
Meanwhile, begin to cook pancakes. Heat a non-stick skillet, spray with cooking spray and cook pancakes for abut 1-2 min on each side. *use about a 1/4 cup of batter for each pancake, should make 8 pancakes.
Serve pancakes with fruit and extra honey.
