Want an easy chicken recipe? Well this is it! I’m all for homemade meals that are easy and require very little prep. Why? Because I’m a chef, I literally cook all day every day – either for personal clients, events, or my family. You name it, I’m cooking.
I make it a point for my son to have freshly cooked meals everyday – or at least I try to. So when I’ve had a busy day, or I’m headed towards a busy day, I like to be able to throw something quick, delicious, and healthy for my little bear to eat.
Let’s also keep in mind, he’s a bit of a picky eater, as of right now he LOVES seafood – I mean absolutely loves it. Which is great, because it won’t be hard for me to transition him to a pescatarian/vegetarian diet. Besides seafood; the only meat he will eat is chicken, oh but not just any chicken, it has to be drumsticks. No breast (unless its Chick-Fil-A), thighs, or wings. I don’t cook chicken for him often, but when I do I try to find different ways to prepare the chicken legs that way he’ll still enjoy it. Like a new sauce or marinade…
He’s big on sauce, everything he eats has to have sauce on it – except for his broccoli; DO NOT ADD ANYTHING TO HIS BROCCOLI. Therefore, I just threw together a juicy sauce blend for these chicken legs so this kid would eat them and like them.
This is an easy recipe that the whole family will enjoy, and you can even have the kiddos help you prepare it. Give it a shot! Let me know how you like them!
Brown Sugar Balsamic Chicken Legs
– 6 Chicken Legs
– 1/4 cup Brown Sugar + 2 Tbsp.
– 1/4 cup Balsamic Vinegar
– 1 Tbsp. Onion Powder
– 1 tsp. Garlic, minced
– 1 tsp. Parsley, chopped
– 1 tsp. Smoked Paprika
– 2 tsp. Red Pepper Flakes, optional
– Salt & Pepper, to taste
Preheat oven to 375ºF
Place chicken legs in a baking dish. Set Aside.
In a small bowl, combine 1/4 cup of sugar, vinegar, onion powder, garlic, parsley, paprika, red pepper, salt, and pepper. Whisk together and pour over the chicken. Make sure the chicken is coated all over.
Side Note: (This can be done the day before, then baked or grilled the next day)
Bake the chicken for about 10-15 mins, flip them over, then continue to bake the chicken legs. After another 10-15 mins, sprinkle the top of the chicken with the 2 Tbsp. of brown sugar and bake for 5-10 mins, or until caramelized.
Serve hot with your favorite sides or with a salad.
