I’m far from a pasta person, I have to really crave it to be able to eat it. However, even then I’m still not that pressed to have it – I look for other alternatives before I actually bow down to the pasta demon. LOL (lighten up I’m only kidding) I just don’t care for it unless its fresh, and making fresh pasta isn’t always something I feel like doing. *shrugs*
In the midst of trying to satisfy my cravings, I realized it’s really the sauce that I truly desire. (Too much sauce!) So anything that I can put sauce on, like alfredo sauce or ooooo a good bolognese..I’m all for it. I will literally make a cajun cream sauce and pour it over roasted potatoes. BOOM pasta craving satisfied. *huffs nails* Unfortunately I haven’t been able to do that in while, since I’ve been cutting out dairy. No worries, vegan alfredo will be on the blog soon.
Until then, here is an awesome alfredo idea! haha I say idea, because alfredo sauce doesn’t have to just go over pasta…or potatoes.
Conveniently, one of my infamous pasta craving came around the other day… no no no..no pasta, please! I’m trying to get fine for the Summer, my goal is an itty bitty bikini…with no jiggle. NO PASTA! NO! So I decided to nip the craving in the bud as early as possible, to prevent me from bowing down to my craving sometime during the day. Sidenote: Eating mid-day is the worst possible time for me, I’m more of an afternoon smoothie or soup type of person, I can’t eat a full meal during the day. Idk why..I just get sluggish, whether it’s a salad or a sandwich. Hence the frittata recipe!
I was in the kitchen digging through my beautifully, unorganized refrigerator when I stumbled across some leftover alfredo sauce; I don’t even remember what I used it for, but it hadn’t spoiled. So alfedo sauce it is!! And it’s no surprise that I had shrimp..I stay with shrimp in stock. Its a must; it’s my “chicken” LOL.
Immediately, I want shrimp alfredo before my day gets started…but with what? Hmmm …..?
Eggs? … sounds a little weird…
But you like weird. TRUE! Weird it is!
Omelet? No, too simple. Frittata? Hmmm…. I like it. Lets cook!

This frittata is amazing! You have to try it, it’s so creamy and flavorful. I’m all for it. It’s definitely one for the books.
Shrimp Alfredo Frittata
– 1/2 cup Shrimp, peeled & deveined
– 6 Egg Whites, beaten
– 1/4 cup alfredo sauce + extra for topping
– 2 Tbsp. Mozzarella, shredded + extra
– 2 Tbsp. Asiago, shredded +extra
– 1 tsp. Parsley
– 1 Tbsp. Onions, diced
– 1 tsp. Garlic, minced
– Salt & Pepper, to taste
- Preheat oven to 375ºF
- In a medium bowl, mix together eggs, alfredo, cheese, and parsley. Set aside.
- Heat a small non-stick skillet with butter or oil, sauté onions and garlic until fragrant. Add shrimp, season with salt and pepper, then saute for about 2 mins. Remove from heat.
- Next, pour egg mixture over sautéed shrimp; mix to combine. Then bake in the oven for about 15-18mins.
- Top with extra sauce and cheese, serve hot and enjoy!
